Chilled Calamari & Scallop Salad

This dish is a good source of heart-healthy omega-3 fatty acids, plus selenium, vitamin B₁₂, and vitamin C. After skillet-steaming the scallops and squid in a small amount of seasoned water, the cooking liquid is reduced by about half and used as the basis of the lemony salad dressing.


* If you are watching your sodium intake, you can use just a small pinch of salt or forgo it altogether, but bear in mind that most of the sodium in this recipe comes from the squid and scallops, which are naturally high in this mineral.
